No-Bake's. The Better Version

I write this knowing that I have three left over from my last batch and it has taken just about all my willpower not to eat them tonight (though I may have a bite in the morning before I rush off to work). 

You may have heard of 'No-bake's' before, well, here is version for those that can't have dairy or for those that just want a new spin. 

Fresh out of the mixing bowl

No-Bake's. The Better Version

4oz Coconut Oil (Extra Virgin)
1/2 cup Almond Milk (Or other alternative milk of your choice) 
1 1/4 cups sugar (Original recipe calls for 2 cups but almond milk is higher in sugar so I use less) 
1 1/4 cups dairy/soy free chocolate chips (most health food store has these) 
3-4 tbls Almond butter (best best best kind is Barney's smooth, found at Whole Foods) or you can use Peanut Butter
3 cups Gluten-free Oats
1 teaspoon vanilla extract 


Place chocolate chips, almond butter, oats and vanilla in a large mixing bowl. Combine the coconut oil, almond milk and sugar in a sauce pan; bring to a rolling boil. Boil for 1 minute. Immediately pour the hot mixture over the rest in the mixing bowl. Quickly stir thoroughly. Drop by large spoonfuls on wax paper - let sit for about an hour and then chill in the fridge (You can also leave sitting out but I like to fridge mine). 

After being refrigerated
