Being on a gluten free diet, I find myself craving 'substance.' These crackers are very easy to prep and have a nice solid flavor.
Sweet and Garlic Salty Crackers:
1 3/4 cups blanched almond flour
Dash of garlic sea salt
1 large fresh garlic clove (diced)
1 tbl olive oil
1 tsp honey
Combine all dry ingredients and the garlic into a small mixing bowl. Beat the eggs, honey and olive oil in a larger mixing bowl; once blended, add the dry ingredients. This will form a dough quite quickly.
Place the dough a piece of wax paper and begin to kneed and flatten. Place another piece of wax paper on top and gently flatten some more until the dough is spread about an 1/8" thick.
Place dough in the middle of a baking sheet (no spray/oil as it will not stick) and cut into squares, circles, oblongs or any other shape you wish while keeping about a 1" diameter. Bake at 350 degrees for about 10 minutes, turn the oven off while leaving crackers in for about 3 more minutes. The outer edges should have a light brown crisp (they will be a bit softer than a traditional cracker).
Yields about 38 crackers. Tastes great alone, with meat, hummus etc.
