Eggplant Non-Pizza

As you may note from the title, this is not pizza. And, it does not taste like pizza. BUT, it kind of looks like pizza and it's quite tasty for a light dinner.

Eggplant Non-Pizza Crust:

1 lbs shredded eggplant (un-peeled)
3/4 cup blanched almond flour
1 tbls ground flaxseed
Tiny pinch of pizza seasoning
Tiny pinch of sea salt
1 egg

Mix ingredients well together in a large bowl. Form dough on a piece of wax paper (about 1/4 inch thick), transfer dough onto the bottom of a greased (olive oil) cookie baking sheet- yes, flip the cookie sheet upside down. Bake at 450 degrees for 15 minutes. Let cool for about 10 minutes.

Toppings:

Here is what I used, but you can choose whatever toppings your heart and tummy desires ;)

2 mild italian chicken sausage links (sliced)
Handful of spinach
~ 2 tbls pizza sauce of your choice

Place the toppings on the crust and bake at 350 degrees for about 10 minutes.



Serves 2 people, or 1 hungry man :)
