Scrambled Eggs with Pancetta

I wish I would have gotten a photo of this one, but alas, there was no time for that this morning :)

This breakie dish was super simple, delicious and filling. (And before we ate it, had some of the Brown Rice Flour Banana bread...)

Scrambled Eggs with Pancetta:

5 eggs
1 tbl cold water
Dash of ground pepper
2 ends of a green onion (minced)
~ 20 (small thin) slices of Pancetta
1 avocado

Whisk the eggs, water, pepper and onion and cook thoroughly. In a separate pan, heat the Pancetta and then mix with the eggs. Slice the avocado and done :)

Serves ~2

Yum!
