Coconut & Almond Flour Pancakes

These are a work-in-progress so bare with me while I experiment. Not bad. At all. But a bit on the crumbly side so I think next time I will add some arrowroot powder, a tad bit more coconut oil and another egg.

That being said, they certainly hit the spot this morning ;)

Coconut & Almond Flour Pancakes

1 egg (cage-free organic)
1 tbls melted coconut oil
1/4 cup hazelnut milk
1 1/2 tbl almond flour ( I used unblanched)
2 tbls coconut flour
1 tsp honey
1/8 tsp baking powder

Method:

Simple. Combine all ingredients and mix thoroughly. Heat on medium (grease the pan with coconut oil) until bottoms become brown, flip and heat on low until done. This mixture won't 'bubble' like traditional pancakes so you just have to gage the doneness so that it's to you're liking.

I had this with two eggs and half of a banana.



Enjoy (with some apple butter and Sublime Chocolate Royal Abyssinia Coffee... ;))
