Coconut Flour Waffles

Last night I was thinking about how I could make waffles with coconut flour without it being crumbly. Coconut flour tends to crumble as there is absolutely no sort of binding agent in the flour itself.

I was so pleased at the consistency of the waffles that I actually did a little dance when I opened up my waffle maker... 

So for the recipe below, you'll have to like the taste of both coconut and banana... luckily, I do.

Coconut Flour Waffles

3 eggs (organic, cage-free) 
1 tsp honey 
1 tbls almond milk (I'd imagine it would work with any milk alternative) 
1/4 tsp vanilla extract 
1/2 of a mashed banana (I saved the other half to eat on the side :))
1 tsp arrowroot flour 
1/4 cup coconut flour
1/4 tsp baking soda
Dash of cinnamon 


In a medium sized mixing bowl, thoroughly mix the eggs, honey, almond milk, vanilla and banana. Add in the rest of the ingredients and blend together. 

Bake in waffle maker on a medium-to-low heat (mine has 5 levels and I used level 2.5). Bake for about 2-3 minutes. 

Mmm dense, moist, delectable and grain-free waffles... I enjoyed mine with 3 pieces of bacon, sliced banana and tad bit of 100% pure maple syrup. Yum!

  1. What is the consistency like with these compared to your average waffle? I always have trouble with coconut flour and the consistency, same with almond flour, in pancakes and waffles.

    1. Hi Lyda, the consistency is actually really nice with those- very 'waffle like.' I think the banana certainly helps with it and it has 3 eggs. It is quite dense. The almond flour ones that I have on here are less dense but still hold together very well. Because of the unblanched almonds and flaxseed they are a little grainy but stil delicious! Let me know how it goes if you try :)

  2. This sounds great! Do you think the recipe would work without the arrowroot flour? It'd be nice if I don't have to add one more thing to the pantry... ;)

    1. Good morning Kellie! Well, I want to say that it would likely work though they may not be as dense. Arrowroot is a thickening agent so you could try without or try tapioca flour, potato starch or maybe a tablespoon of almond flour. If you don't try any of those and it seems a little wet, then add in a bit more coconut flour, that may do the trick ;) Let me know how it goes!
