Flourless Banana Pancakes

Well... I had this for dinner but I'll post in the 'breakfast' category. Breakfast is, as you know, my favorite meal of the day.

Experiment, experiment, experiment- and throw it in the Ninja ;)


Flourless Pancake(s)

1 small banana (or 3/4 of a 'normal' sized)
2 eggs
1 tbls ground flaxseed
2 tbls hazelnut milk (or another milk alternative) 
Dash of cinnamon 
Tiny dash of sea salt 

Method: 


Put all ingredients in the blender. Blend and pulse. Heat a coconut oil coated pan to medium-low and pour the batter in once heated. I made one giant one... this could make about 4 pancakes.


This turned out a bit like a crepe so I may try to small crepes with this recipe next time.


I flopped a bit flipping my giant pancake but- it was a good dinner (or breakfast) if you ask me...

  1. I don't really like banana pudding, which seems to be an interesting Paleo dish but I do enjoy bananas in pancakes.

    1. If you can tolerate eggs and nuts, they are a great easy paleo breakfast.
