Scrambled Eggs with Prosciutto

This is much like the 'Scrambled Eggs with Pancetta,' using a different cut of meat and spinach instead of avocado.  Breakfast is a scared part of the day for me- while I may not always have the time to enjoy it for hours-on-end, I am in my mind.

This was light and completely satisfying.

Scrambled Eggs with Prosciutto:

2 eggs (organic cage-free)
1 tbl water
Handful of spinach torn into smaller pieces
~5 thin slices of prosciutto
Dash of ground pepper


Method:

Scramble the eggs, add water and continue to scramble. Add in the spinach, prosciutto and pepper and cook on medium on a small greased (coconut oil) pan.

Quick and easy ;)


Serves one.
