I struggled to find a title for this recipe because it can also be referred to as 'cooking and mixing various things together that are in my fridge for dinner.'
But- it turned out well :)
Sauerkraut Kielbasa and Eggs with Butternut Squash
For the butternut squash:
1 butternut squash
2 tbls coconut oil
1/4 apple sauce (organic)
Dash of ground pepper
Dash of garlic sea salt
Dash of cinnamon
Tiny dash of nutmeg
Bake the squash whole at 375 degrees for 30 minutes. At 30 minutes, carefully remove and slice open lengthwise (you'll need some heavy duty gloves because it is HOT). Scoop out the seeds and add a tablespoon of coconut oil in each half (pierce the flesh a bit so it absorbs). Bake face up for about 40 more minutes.
Carefully scoop the flesh out and place in a small sauce pan. Stir/mash the squash and then add in the rest of the ingredients. Stir and keep on low heat until you are ready to eat.
1 smoked turkey kielbasa sliced
1 cup sauerkraut
Dash of paprika
Heat the kielbasa on medium for a few minutes, turn to low and add in the sauerkraut. Add in the paprika and leave on low until you are ready to eat.
As a side to this dish, I used my previously posted Traditional Deviled Eggs.
Not bad ;)
