Zucchini & Mushroom 'Non-Pasta'

I call it non-pasta because it has many elements of pasta- minus the actual pasta. But you won't miss it... trust me.

This dish was quite easy- all stovetop and delicious. 


You're noodles will be the zucchini. Here is how you do this: 

Peel 4-5 small zucchini's 
Cut into thin strips (about 1/8" thick) 
Place in salted boiling water for 4 minutes 
Remove, place in strainer and set aside 

Zucchini & Mushroom 'Non-Pasta' 

2 packages/handfulls of mushroom of your choice
1 shallot, diced
4 already cooked sausage of your choice (I used a chicken with sun-dried tomatoes)
2 garlic cloves, diced
Dash of ground pepper
Tiny dash of basil
Tiny dash of italian seasoning
Dash of fennel 
Dash of garlic seat salt 
2 tbls Extra Virgin Olive Oil 
1/3 cup of water
1 small jar of pasta sauce of your choice (I used a garlic & merlot) 

Method: 

Heat the chicken and cook the garlic in one pan. In another pan, sauté the mushrooms and shallot in the olive oil and 1/3 cup of water. Then add in the seasonings from above to the mushrooms. Add the meat mixture in with the mushrooms and then add the already cooked zucchini. Top with the sauce and you are done ;)
