Oh how I love pancakes. And breakfast. And everything that comes with the morning, including my favorite coffee cup ;)
This morning I whipped up some batter for an experimental coconut flour pancake -thinking "oh this will be a flop..." but hey, they turned out pretty delicious with only a hint of the coconut flavor. Though they could use a little something that I can't quite pin-point just yet so for now, here's what I have.
Coconut Flour Pancakes:
1/4 cup coconut flour
1/2 tsp baking soda
Pinch of sea salt
1/2 cup almond milk (or other milk alternative)
2 eggs (organic cage-free)
1 tsp vanilla
1 tsp honey (I used wildflower)
Coat a pan with coconut oil and turn on medium-low heat to warm. Whisk the eggs and add in the rest of the wet ingredients, mix thoroughly and then add the dry ingredients - stir until it becomes a batter consistency. Cook until you can see the bottoms hardening, flip and cook until they are done throughout - about 8 minutes total.
Yields 2-3 pancakes (or... you can can do what I did and make two medium sized and one cute baby one).
I had mine with a tiny bit of 100% pure maple syrup and some bacon.
