Anyway, I still like the concept and recipe so I'll share it here with you and will let you know when there is another- more 'sconey' version ;)
Almond Flour Blueberry Scones:
2 cups almond flour (finely ground)
1/4 tsp sea salt
1 tsp baking soda
1/2 macadamia nuts (chopped)
1/2 cup fresh blueberries
1 egg (organic cage-free)
2 tbl honey
1 tsp vanilla
Blend all the wet ingredients together in a large mixing bowl and then add in the dry ingredients. Blend thoroughly.
Form into 'scone shapes' or thick semi-triangular shapes. It won't be pliable like dough so you may need to work with it a bit so that it stays together.
Bake on a coconut oil greased pan at 350 degrees for 13 minutes.
Yields ~ 8 scones
