Pesto 'n' Burgers with Guacamole

Grass-fed beef, fresh herbs and some healthy fats. What's not to like about this meal?

I've been writing some lengthy posts lately, so I'll keep this one brief ;)


Pesto 'n' Burgers with Guacamole: 

First of, prepare the pesto so that you can cool in the fridge while the burgers are prepared and grilled. 

For the burgers:

1 lbs ground grass-fed beef
Dash of paprika
Dash of ground pepper
1 tsp ground cumin
2 tbls marmalade of your choice (I used cranberry orange)

Method:

Combine all ingredients and form your burgers. Grill to your liking.

Yep easy ;)

I made two small ones and one large, you could do two monster ones or four small ones. Heck, I suppose you could do one ginormous one if you really wanted... hm. That would be a big burger...Once you've formed the patties, place them in the fridge for about 10 minutes to prevent them from falling apart on the grill.

For the guacamole:

1 large avocado or 2 'normal' size
1/2 red tomato, diced
1/2 small white onion, diced
Dash of sea salt
Dash of paprika
Splash of lemon juice




Method:

Mash the avocado vigorously then add in the tomato and onion and mix well. Add in the salt, paprika and lemon juice and blend together until whipped.




Well, you may prepare however you wish. I put the pesto on my burger with the guacamole on a bed of green-leaf lettuce.

Who needs a bun?
