No-Bake Banana Chews

My experiments with bananas seem to always happen when I've found myself needing to use up bananas because I have gone a bit wacko and purchased too many. I'm slightly addicted.

It was over 100° yesterday thus turning on my oven did not sound particularly fun, so I decided to do some sort of no-bake. These never really did harden like a cookie so I'll need to do some more experimenting here. BUT they are tasty and jam-packed with protein and fiber.

No-Bake Banana Chews

3 bananas
2 tbls black chia seeds
1/2 cup pecan flour
1 tbl sunbutter
1 tbl organic, unsweetened coconut
1 tbl dairy, nut & soy free chocolate chips

Yields ~ 6 'chews.' Be sure to keep this refrigerated.

These were perfect for pre-run fuel.
