Blueberry Lava Porridge

OK, candidly, this was suppose to be pancakes. Yeah. A flop or a new conception? I'd like to think of it as the latter ;)

This was derived from my quest for egg-less breakfasts. Honestly? It was really good. Like, really good. Completely satisfied.

So, here ya' go... 

Blueberry Lava Porridge

1/2 cup almond meal (I used blanched)
1/4 cup organic, unsweetened coconut flakes
1/4 cup ground flax seed
1/4 tsp baking soda
1/2 tsp baking powder
1 tsp 100% pure maple syrup
2/3 cup warm water
1 tsp vanilla
3/4 cup frozen blueberries

Method:

Heat a skillet to low-medium, greased with oil (I used coconut oil).

In a medium mixing bowl, toss in the almond meal, coconut, flaxseed, baking soda and baking powder. Sift the dry ingredients and then add in the water, vanilla and maple syrup. Stir into a batter.


Pour entire concoction in the skillet and allow it to cook for a couple minutes. When you see it bubbling up, then drop in the frozen blue berries. Allow to cook for about 4 minutes.



Then... well, give it a few stirs until it comes thicker and thicker. The porridge will soon turn blue.




Don't be alarmed. Despite it's appearance, it is all  natural :)


Pour into a bowl and enjoy ;)
