Pumkin Hemp Porridge

OK, this was really good. It doesn't make a ton (with the quantities listed below) but it is so jam-packed with goodness that it was perfect. Side note: hemp seeds are a great source of Omega-3 AND have 10 grams of protein in a quarter cup. Some serious nutrition in these bad boys.

Anyway, on with my new morning bliss...




I adapted this recipe from Eat the Cookie. Thank you kindly ;)

Pumpkin Hemp Porridge

1 cup water
1/4 cup hulled hemp seeds (divided in half)
1 tbls pureed pumpkin
1 heaping tbls almond butter

Topping:

1/4 cup fresh blueberries
Sprinkle of coconut flakes, organic/unsweetened
Sprinkle of almond slivers

Method:

In a small saucepan, bring the cup of water to a boil and then stir in 2 tbls of the hemp seeds. Bring the temperature down to a simmer. Simmer for about 10 minutes.

In a small bowl combine the pumpkin, almond butter and the remainder of the hemp seeds. Pour the hot water and hemp seeds into the bowl and stir until well combined.

Top with the blueberries, coconut and almond slivers (or whatever your heart desires ;))
