Banana Oat Bread

Yep, that's right, this 'primal' girl is eating oats again.  After nearly 6 months of going completely grain free it became very apparent that my needed a safe a healthy grain to be added back into my diet. I believe oats are the solution for me right now. Maybe not always, as I feel this whole diet thing is progressive, but for now, it's good. Very good. And I think they are helping me maintain my weight.

I've been back on them for about two weeks now (small amounts) and it seems to have helped my energy and tummy quite a bit. This I believe is in part due to the fact that I have decreased my nut and seed intake while introducing oats (certified gluten free) back in. I found that I was eating way to many; which is somewhat easy to do when you are following a primal lifestyle.

So anyway, this bread rocks. It is jam-packed with awesome proteins and has no added sugar. How about that?

Banana Oat Bread

3 ripe bananas, mashed
2 eggs
1 cup oats, finely ground
1/2 cup oats
1/4 cup almond flour
1 tsp ground flaxseed
Dash of sea salt

Heavy dash of cinnamon
Dash of nutmeg
1 tsp baking soda
1 tsp baking powder
2 dates, chopped
5-6 walnuts, crumbled
1/4 cup grapeseed oil


 Method:

In a medium bowl, combine the mashed bananas and eggs. Set aside.

Grind down a cup of oats using either a food processor or coffee grinder (I used a coffee grinder). 

In a large bowl, combine all of the dry ingredients leaving out the dates, walnuts and oil.

Add in the bananas and eggs and mix thoroughly. Fold in the dates, walnuts and oil and stir until well incorporated into the batter.


Grease a bread pan (I used olive oil) and bake at 350° for about 40 minutes.
