Kale & Butternut Saute

Sometimes, you just need quick. And easy.

This could however take a bit longer but... I used already chopped frozen butternut squash. I know. Give me break. I was tired. And hungry. At least it was organic.

Note: These amounts are estimations, I didn't really measure.



Kale & Butternut Saute

1.5 tbls oilve oil 
1 tbls water
1/2 bushel of chopped kale
1 tsp scallion, minced
1 cup chopped butternut squash
~ 12 raisins
Dash of ground pepper
Dash of garlic powder
Dash of mustard powder 

Method: 

Heat olive oil on low and then add in the kale and cover for about 4 minutes. Give the kale a stir and add in the scallions, raisins and seasonings, cover and heat for about 4 more minutes. Give everything a stir and then add in the butternut squash (if frozen, thaw out first). Heat for about 4 more minutes or until the squash is fully heated.

This was a nice light dinner but would go great along side some chicken or pork chops. Yum.
