Lemon Hazelnut Macaroons

This is a quick recipe that  I came up with trying to think of a macaroon I could make without eggs  and without baking...


Four simple ingredients.

Lemon Hazelnut Macaroons

1 cup large coconut flakes, organic unsweetened (you could use small if you prefer)
1/2 cup hazelnut flour
1/3 cup coconut butter (not oil!)
1 tbls lemon juice


You will need to use your hands for this one. Because there is no binding agent, you are relying on the coconut butter to mold everything together. Put all of the ingredients in a medium-sized bowl, using your hands mix all the ingredients together and form small macaroon cookies.

Place them on wax paper and store in the refrigerator to help them keep their shape.

Yields ~ 6 macaroons

Holy yum. These were a bit rich. One is definitely plenty. I may add more lemon next time. These were awesome.
