Grain-free Pumpkin Banana Cacao Loaf (also nut-free)

Well this was tasty at 5:30AM this morning when I just could not lie in bed anymore (I know, I'm working on the sleep thing).

I ate a slice before my walk (that was shockingly cold, "Hello fall!"). Mmm... so good.





Nut & Grain-free Pumpkin Banana Cacao Loaf (could that name be any longer?)

1 semi-ripe banana, mashed
1 cup pumpkin puree
3 eggs, organic cage-free
1 tsp vanilla extract
3 tbls ground flaxseed
1/3 cup coconut butter (not oil!)
1 tbls chia seed (I used white)
3 tbls water
Dash of sea salt
Pinch of nutmeg
Pinch of clove
1 tbls raw cacao
 
Method:

First, in a small bowl, combine the chia seeds and water. Let sit for at least 10 minutes so that it starts to form a gel.

Next, Mash a semi-ripe banana in a large mixing bowl, add in the pumpkin puree and then whisk in the eggs. Add in the vanilla, flaxseed and spices and mix thoroughly.

Add the coconut butter and chia seeds and stir vigorously until incorporated (I may melt the coconut butter next time..)

Grease a loaf pan with coconut oil and bake at 350° for 40 minutes, cover with foil at 40 minutes and bake for another 15 minutes or until a toothpick comes out clean.





I call this a loaf because it's dense and not really like a bread. It's actually very moist too like a cake. And didn't rise much. It's just a loaf of awesomeness ;)

As always, store this in the fridge...
