Grain-free Pumpkin Granola

alhfa;lsdhfa;slhfa;slfhdas;ldfh! Yeah, that good. I don't know how else to explain this amazing concoction. All compliments of Juli Bauer from PaleoOMG. I read this recipe about 5 times over when she first posted it and simply had to make it that night. Mine is slightly different but mostly just due to what I had on hand and allergies (cinnamon and ginger).

Ah. Awesome. I had a HUGE bowl this morning WITH almond milk. So yeah, I've had my nut and seed intake for the day. For sure. But, it was worth it.





Grain-free Pumpkin Granola

3/4 can pumpkin puree
1/2 cup slivered almond
1/2 cup chopped walnuts
1/2 cup dry roasted, sea salted pumpkin seeds (I use Eden) 
1/3 cup coconut flakes, unsweetened
8 dates, pitted
1/2 tsp vanilla
1/4 100% pure dark amber maple syrup
1/3 cup coconut oil, melted 
Dash of nutmeg
Pinch of clove

This was actually a little too sweet for me so next time I may reduce the maple syrup even more and cut the dates back to 6.

Method:

Combine the pumpkin, nuts, seeds and coconut and mix thoroughly. Add in the vanilla, dates and syrup and then the oil and seasoning.

Spread evenly on parchment paper and bake at 350° for about 40 minutes. give it a stir at 20 and 30 minutes but careful not to leave little pieces on their lonesome as they will burn.


Allow to cool completely and then fridge it in an airtight container.
