My body has been responding well to eating things in their raw state. I find that I feel better throughout the day when I eat plenty of raw, cold items.
These noodles are really easy to make and can be paired with countless dishes.
Raw Zucchini Noodles
Dash of sea salt
Peel the zucchini and then shred the remaining zucchini into thin noodles. I did this using a hand shredder though you could use a food processor.
Place in a dish and sprinkle the sea salt throughout the noodles. This will allow for the moisture to drain from the zucchini and the noodles will then begin to soften.
Store for at least 2 hours in the refridgerator before you serve.
Serves 1-2 people.
Use as a side dish or main dish. I had them with some Clean Pesto and Mahi Mahi. Yum!
