Spinach Turkey Burgers & Leek Brussel Sprouts

I don't eat turkey that often but I think I may start eating it more. These were really good. Turkey isn't really a full-flavor meat so the more you want to add to it, the better.

This was a nice change of pace and very filling. A good end to Day 7 on my 21-Day Sugar Detox.

Spinach Turkey Burgers & Leek Brussel Sprouts

For the burgers: 

1/2 lbs turkey burger (I got dark meat)
1/2 tsp minced scallions
3 tbls chopped fresh spinach
Pinch of sage
Pinch of thyme

Method:

Mix all the ingredients in with the turkey burger thoroughly and form two patties.

Add a small amount of olive oil to a medium skillet and heat to medium-high. Cook the burgers (covered) for about 4 minutes. Flip and cook for another 4 minutes.

Press the burgers with a spatula, flip and cook about another 2 minutes per side or until done throughout.



For the brussel sprouts: 

8-10 brussel sprouts
2 tbls, chopped leeks
Dash of ground pepper
2 tbls coconut oil

Method:

Cut the ends off of the brussel sprouts and then halve them. Steam them for about 5 minutes.

Meanwhile, heat a tablespoon of coconut oil in a medium pan and add in the leeks. Sautee with the cover on.


After a few minutes, add in the brussel sprouts and add the pepper and the other tablespoon of coconut oil and sautee for a few more minutes with the cover on (brussel sprouts should begin to brown a bit and leeks should begin to soften.
