Grain-free Pumpkin Pecan Spice Pancakes

Long title. I know.

These pancakes are awesome. I had one pre-workout today and it was the perfect snack. Though now I can't wait to have them for breakfast ;) But as you all know... I could have breakfast for every meal. Anytime, anywhere, breakfast will somehow always sound good to me.

Anyway, I found this recipe on Fast Paleo. I altered the spices a bit but for the most part stuck to the original.

Grain-free Pumpkin Pecan Spice Pancakes

1/3 cup almond meal (I used unblanched)
1/4 tsp baking soda
Dash of sea salt
Dash of cinnamon
Pinch of cardamom
Pinch of turmeric
1/3 cup pumpkin puree  
3 tbls honey
2 eggs, separated
3-4 pecans, chopped

Method:

Separate the eggs by placing the egg whites in a small bowl and the egg yolks in a medium sized bowl. Whip the egg whites until they start to turn white and frothy, set aside. Add the pumpkin puree and honey to the egg yolks and mix well.

Grease a pan with the oil of your choice (I used grapeseed) and turn to medium heat. 

Combine the almond meal, baking soda and spices in a small dish and sift. Add to the wet ingredients and stir until well incorporated.

Fold in the egg whites and stir well, lastly fold in the pecans.

Drop the desired pancake size into the pan and turn down medium-low heat. When the pancakes begin to bubble on top and thicken on the bottom, flip over (about 4 minutes).

 

Cook for about another 4 minutes and then flip to the other side, cook for about another minute, flip and cook another minute on the other side. This consistency is different than your average pancake so careful to not burn them.




Yields ~ 2 medium size pancakes
