I am one of those people that needs to eat right when I wake up. I mean within the first 15 minutes or I turn into a shaky, delirious monster. It then takes me hours to recover and get my glycemic levels back to normal. If I am going out to eat for breakfast, I will have a spoonful of almond butter, small handful of nuts or some fruit before I go. I simply need to fuel very early on in the mornings.
In fact, on the weekends, I usually get up at around 6-7AM (oh how I wish I could just sleep in) and have a snack such as an almond flour muffin or half an apple with some nuts and then go back and lie in bed and read the news, write etc. until I'm actually ready to get up and make breakfast.
Anyway, this was a great snack before my walk on the treadmill this morning (where I watched two episodes of the the first season of Weeds, what a funny show!)
Macadamia Sweet Potato Munch
3/4 cup chopped (previously cooked/steamed) sweet potato
1/4 tsp honey
1 tsp coconut butter (not oil)
10-15 macadamia nuts (unsalted)
Pop the sweet potato in the microwave for about 30 seconds, stir in the remaining ingredients.
This picture doesn't really convey how awesome this was but I will definitely but having this a few times a week. Yum!
