I typically don't have smoothies in the winter months (because it's so cold I guess?) but I think my body was in a bit of shock after Thanksgiving. I needed something light and easy on the digestive system.
This hit the spot...
Banana & Blueberry Smoothie
1 semi-frozen banana
1/3 can light coconut milk
1/3 cup frozen blueberries
2 tbls PB2 (powdered peanut butter)*
*Why powdered peanut butter?
Powdered peanut butter (PB2) contains 85% less fat calories than traditional peanut butter and zero hydrogenated oils. No, fat is not generally the enemy. I'm a huge fan of fat. BUT there is a large amount of polyunsaturated and monounsaturated fat in peanuts which can both be difficult to digest and can cause stomach upset. The PB2 does not contain either of these. In addition, the PB2 still contains 5g of protein in two tablespoons.
And, you still get the oh so lovely taste of peanut butter...
