The hemp seed is extremely nutritious, providing an excellent source of protein (5g in two tablespoons) and once the shell is removed (hulled) they are quite supple and easy to digest. Hemp Date Balls
~16 medjool dates, pits removed
2 tbls warm water
1/4 cup hulled hemp seeds (I use Bob's Red Mill though they are no longer going to be certified gluten free so I will need to find another brand)
1/3 cup smooth almond butter (I love Barney's)
In your food processor, blend the dates, water and hemp seeds. Once
the ingredients are well incorporated (you may need to use a spatula to
mix in some of the seeds), add in the almond butter and pulse until
everything is blended.
Form balls (or whatever shape you desire ;))
I wrap in cellophane and store in the fridge.
Yields ~ 7 balls
These are a bit sticky so you could roll them in coconut flakes or cocoa powder to make them easier to handle.
A filling treat:
The past couple of days I took a wheat and gluten free brown rice tortilla (I use Food For Life brand), spread a 'ball' on it and wrapped it up. Yum!
