Nuttin' but Healthy Cookies

I'm usually not one for 'cutesie' recipe names but when I decided on the recipe for these cookies (in the shower), this title came to mind (also while in the shower). "They" say great ideas come in the shower.

Any who are they? Well,  watch this clip from Elizabethtown.

Love that movie. 

Anyway, I tend to buy more bananas than any individual could safely consume in a given week so I almost always have to make something with the remaining. Or freeze them for smoothies or Chia Seed Pudding. Since I had just baked some Cinnamon Raisin Bread with bananas the night before, I wanted to make a cookie.


And these truly are healthy cookies... IMHO.

Nuttin' but Healthy Cookies

2 1/2 ripe bananas
1 egg, organic/cage-free
2 tbls PB2 peanut butter
1/2 cup shredded coconut, unsweetened
1/2 cup freshly ground almonds (or almond flour/meal)
1/4 cup chopped pecans
1/4 cup dairy/soy free chocolate chips (I use Enjoy Life
Dash of cinnamon
1/2 tsp baking soda

Method:

In a large bowl, mash up the banana and then add in the egg and mix well. Add in the PB2, coconut, almonds, pecan and chocolate chips and mix in until all ingredients are incorporated. Lastly, add the cinnamon and baking soda and mix in thoroughly.


Bake on parchment paper at 350° for about 10-13 minutes. They will remain soft but the toothpick should come out clean. And when I say they remain soft, I mean, very soft :)


These are also very moist, I recommend keeping them in the refrigerator for freshness. 

Yields 10-12 medium sized cookies
