Carrot Pie Protein Balls



These really are like mini pies. Mini raw pies of goodness. And they are not too sweet. I'm SUPER sensitive to sweet so you may want to adjust the recipe to your liking. 

I, did not come up with this idea. I came across it on what other social site than good ole' Pinterest?!?

Carrot Pie Protein Balls

(Adapted from Hungry Meets Healthy)

1 cup whole rolled oats (certified gluten free)
3 medium sized carrots, finely shredded
1/2 cup almond butter
1/4 cup raisins
1/4 cup raw pecans, chopped
1 tbls 100% pure maple syrup
1/4 cup ground flaxseed
Dash of cinnamon
Dash of nutmeg


Shred the carrots in your food process, combine all ingredients in a large bowl and mix thoroughly. Roll into desired size balls and store in the refrigerator.

The original recipe calls for 1/3 cup of maple syrup and less carrots (and some other variations). I preferred this amount of sweetness though it may have been a bit more challenging to form the balls - more almond butter may have helped with that which I may try next time.
