Goat Cheese & Butternut Squash Scramble

Hellllllllooooooo brekkie ;)))

My favorite time of the day, and my favorite meal of the day. A heavenly combination. And so is the recipe below. Delicious.

I'm pretty stoked that tomorrow is Saturday and I have all the ingredients to make this again. Yay ;)))

Goat Cheese & Butternut Squash Scramble

1/2 tbls coconut oil 
2 eggs, organic/cage-free
Handful of spinach
Splash of almond milk (~ 3 tbls)
Pinch of chives (I used dried)
Pinch of rosemary (I used dried)
1/4 previously cooked butternut squash, diced
1 small slice of hard goat cheese, diced

Method:

Quite simple :) Heat a small skillet on low-medium, whisk together all ingredients and scramble. Done ;)

I paired mine with some fresh blueberries, strawberries and mint.


I love weekend breakie...
