A Bodhi Life Dinner: February 2013

This meal was a long time coming. We had it planned a couple of different times and unfortunately (or fortunately depending on how you look at it), was postponed due to my surgeries.Though, I will say it was fortunately, because this night turned out to be quite an incredible evening. There were 17 of us and I cooked for six hours straight on the day of, and did prep-work the day prior.

I was in my element. You want to see a smiling Ashley for hours? This is it ;)

I may or may not have od'd on water, however. I counted it out and I drank eight bottles of water in eight hours (and no alcohol). I'm quite certain that I went through some sort of detox the next day.

This was a very special night for me. It took a lot of planning, a lot of preparation and a lot of work. But it's work that I love and the meal was for people that I adore and hold in high regard.

We listened to some great music (IMHO as it was my playlist ;) See below for a glimpse), I had amazing sous chefs and gracious hosts. Could not have asked for a more perfect time.

So, what did I make for 17 people?

The Menu... 





Chevre Goat Cheese Stuffed Dates
 
Prosciutto Wrapped Asparagus  (2 stalks with the prosciutto and 2 stalks w/o prosciutto pan fried) I added a few splashes of lemon on each as well.

Hard Deviled Eggs (Sarah's Baked Deviled Eggs, Traditional Deviled Eggs) I listed both because I used the recipe from Sarah's Baked Deviled Eggs for the 'deviled' and the method (boiled) from the Traditional Deviled Eggs. I also added capers to half.

(Recipe is slightly different, I used romaine instead of kale and omitted the goat cheese and apple. I used several avocados,  blood oranges and 2 grapefruit and slivered almonds instead of macadamia nuts)

(I actually omitted the almonds so these were more or less just chocolate macaroons)  

So Delicious Coconut Ice Cream (various flavors) with a berry salad (strawberries, blueberries, raspberries and blackberries) mixed with a package of fresh mint 


This was only about 1/3 of the items... :)
And, I had some lessons learned (That I blasted on my Facebook and Twitter which some, I found, did not care for) ....

Do not try a 'new' method. Of anything. For anything. Not the time for experiments. ;)

While chopping sweet potatoes, put on Van Morrison radio and dance. It makes the chopping that much more fun.

Take a long break, watch some of a movie, go for a walk and take a long hot shower to recollect your thoughts. ;)

Remember to take moments to step back and watch the room, hear the voices, laughter, smell the food and soak it all in.
