Indian Chicken Bowl

OK, I am not an Indian cuisine expert (although, how fun would that be to learn?). This meal was another one my 'kitchen sink' recipes. AKA, I just threw some things together with hopes that it would turn out to be tasty meal. 

And this one was. Super tasty. I tend to forget how much I love Indian spices until I have it again. I definitely need to cook with Indian influences more often.

 

Indian Chicken Bowl

2 zucchini, thinly sliced
2 carrots, chopped
2 chicken sausages, sliced (I used Aidells)1/2 tsp minced scallion
Large handful of kale, chopped
Heavy dash of Indian spices
Dash of ground black pepper
Dash of garlic
Small handful of raisins 

Method: 

Steam the zucchini and carrots. Meanwhile in a large skillet, saute the chicken, scallions and kale with EVOO. Add in the zucchini and carrots along with the rest of the ingredients. Cook everything together for a few minutes and viola! 

Serves ~ 2 



This was super fast, easy and tasty. A make again for sure.
